Prosciutto, Apple and Brie Tea Sandwiches with Sage Butter
I made these sandwiches for a Bible study I am part of. I thought it was fitting for the “Tea Lady” to bring tea sandwiches and tea. They are quite delicious and simple to make. I especially like the hints of sage.

Ingredients:

RADISHES sliced thinly
PROSCIUTTO
BRIE
BREAD I used sliced seeded sourdough bread, ends trimmed
SAGE BUTTER butter and finely chopped fresh sage, about 1 sage leaf per 1 tablespoon of butter (or if using dried sage, use 1/3 of fresh)
ARUGULA
FRESH APPLE SLICES
OLIVE OIL I used Basil Olive Oil
Instructions:
Prepare the sage butter: It's best to use softened butter here. Allow yours to sit on the counter at room temperature before stirring in the chopped sage leaves. Set aside.
Assemble the sandwiches: I used store-bought sliced sourdough bread which come in a regular square size. I trimmed the ends, assembled the sandwiches and divided each full sandwich into three rectangular tea sandwiches. Allow three tea sandwiches per person (1 full sandwich).
Begin by spreading the sage butter on the bread. Add the prosciutto and layer the other ingredients--apple slices, brie, radishes and arugula. Serve with tea or cocktails.
Note: I drizzled the bread with Basil Olive Oil and toasted lightly before using.
