Lemon Garlic Chickpea Power Bowl

Ingredients:

1 cup cooked quinoa or brown rice

1 cup chickpeas, drained

1 cup fresh spinach

½ cup cherry tomatoes

½ cucumber, sliced

Lemon zest

Olive Oil

Garlic powder

Italian Seasoning

Sea salt

Directions:

Warm quinoa and chickpeas. Toss chickpeas with olive oil, garlic, lemon zest, herbs, and salt. Assemble bowl with spinach, tomatoes, and cucumber. Finish with a drizzle of olive oil and a squeeze of fresh lemon. Add meat of choice or tofu for extra protein. I recommend drizzling one of our balsamic vinegars over top for extra flair.
