Sheet Pan Chicken Fajita
Ingredients:
-2 lbs chicken breast cut into small strips
-1 each: yellow, orange and red peppers cut into strips
- 2 onions sliced thinly
- juice of one lime
- 1/2 tsp salt
- 4 tbsp olive oil
-2 tbsp Fajita Seasoning
Preparation:
Put the chicken, peppers, onions, juice of the lime, oil and fajita seasoning into a large bowl. Mix until everything is coated in the fajita seasoning mix. Spray a large sheet pan or roasting pan with Pam spray to prevent sticking. Add the ingredients to the pan and lay out evenly. Place in a 400 degree oven for 25-30 minutes or until the chicken is cooked and the peppers are a little soft. Serve with flour tortillas and rice. Enjoy!
